Cooking with Cam: How to Make Japanese Soufflé Pancakes

No need to stand in a long line outside a Tokyo dessert shop to score some of these amazing little pancakes. Now you can learn how to make them in your own home. Find out how an ordinary pancake batter literally takes on new heights as you make these towering treats.

To make the pancakes you will need:
Equipment:
4 metal pastry rings 3 inches in diameter and at least 1 inch tall (in the kit)
Measuring cups and spoons
2 mixing bowls (one for combining egg-yolk mixture; one for beating egg whites)
Hand-held electric mixer
Small whisk or fork
Large skillet with lid
Flat, flexible heatproof spatula
Paring knife (for loosening pancakes from metal rings after cooking)
Ingredients
Spray cooking oil for coating skillet and pastry rings
2 egg whites
1 egg yolk
3 tablespoons granulated sugar, divided into 1 tablespoon and 2 tablespoons
1 teaspoon vanilla
½ teaspoon baking powder
3 tablespoons all-purpose flour
2 tablespoons milk
1/8 teaspoon salt
1/8 teaspoon cream of tartar
Your favorite pancake topping, for serving
