The ASBC standard method for measuring IBUs had worked well for almost 50 years, until new styles of IPA came along with massive amounts of whirlpool and dry hopping. The IBU test did not represent the new hop characters well. John Palmer explores the science of bitterness and helps explain how bitterness and aroma are developed in modern beers.
