Author, food reporter and restaurant critic Corey Mintz takes a searing look at the restaurant business, dirty dishes and all, in his new book The Next Supper.
As the food service industry had an extraordinary boom in the few years leading up to the bust that was the pandemic. Chefs went from TV stars to starving artists and the seemingly well-oiled machinery of the restaurant industry started to unravel.
The industry itself found ways to survive, from ghost kitchens and meal kits to makeshift streetside patios and to-go pantry essentials; But behind it all was a sense that the next evolution of dining needed to address some systemic failures in order to survive.
Corey Mintz talks about The Next Supper with Chris Nuttall-Smith (Top Chef Canada), and discusses the path towards a safer and more equitable future for our dining experience.
